Kesari (Rava)


 Ingredients :

Rava  - 1 cup

Sugar -   2 cups

Milk - 3 cups

Cashewnuts -  15(roasted)

Raisins  -  15(roasted)

Ghee  -  5 tbs
kesari powder -  a pinch

Saffron - a pinch (optional)

Cardamom powder - 2 tsp

Method :

In a thick bottomed pan fry cashews and raisins in ghee. 

After that , roast rava  to light golden yellow colour in ghee and keep aside. 

Heat 3 cups of milk  in the same pan add the colouring and 

the saffron when it comes to a boil. 

In a medium heat add the rava slowly in the boiling milk, 

constantly stirring, and mix well. 

The rava has to cook well , add  sugar and stir slow and throughly .

When the sugar is fully dissolved , the kesari'll become watery,  

Give some more time to the kesari to  absorb all the  sugar.  

When it come back to its  thick consistancy, 

add the remaining ghee and cardamom powder

Keep stirring until the  kesari  starts leaving the sides of the pan. 

Garnish with the fried cashews and raisins and a spoon of Ghee.
