Carrot Halwa


  

Ingredients:

 

Carrot  - 1 cup (shreded)

Sugar - 1 1/2 cups

Cardamom - 1/2 tsp

Saffron - a few strings

Milk - 1 1/2 cups

Cashew  - 1/2 cup (powdered) 

Ghee - 3 tbs

Cashew - 20 nos (roasted)

Raisin - 20 nos (roasted)

Baathaam - 10 nos(roasted)

 

Method:




Peel the skin and grate the carrots.

Heat 3 tbs  ghee in a wide pan.

Roast the nuts till golden brown and set aside. 

In the same pan, add grated carrots, cardamom and 

saffron and saute for 2 minutes.

Add milk and let it cook on low flame for 40-45 minutes 

till all milk is absorbed and the mixture becomes thick. 

Add sugar and cook for 5 minutes. 

Add cashew powder and mix well. 

Garnish with roasted nuts and add  a spoon of ghee before serving.
